Il
Velluto is obtained from the
selection of the grapes from
the Pinerolese area, which are
particularly well exposed and
adapted to develop the correct
amount of polyphenols necessary
to give this wine its characteristic
body. It is a modern wine using
the modern technical methods
combined with the traditional
use of oak barrels. It is a
wine of modern conception that
widens the potential of Pinerolese
viticulture.
Composition: Il Velluto is
made from the blending of the
Barbera (75%) and Dolcetto (25%)
grapes cultivated in the Pinerolese
area. Time of harvest: last
ten days of September for the
Dolcetto and The first 10 days
in October. for the Barbera.
Production Technique: fermentation
and maceration of the must in
vats for around 12 days; following
storage and maturation in oak
barrels for more than a year.
It is then bottled and matured
for a further six months before
being released for sale.
Alcohol content: 14% [vol.]
How to drink: Il Velluto is
a wine characterized by its
structure and notable personality
would go very well with red
meats, green salads and seasoned
cheeses. We would also recommend
this wine for a relaxing evening
with friends.(We call this a
meditative wine!) Best served
at temperature of 18- 20° C
ensuring it has been left to
breath around an hour before
drinking. |
